As for a good wine, so a good cheese is determined by its quality of ingredients.
The milk which is locally produced comes exclusively from farms with enriched and aromatic pastures. In the transformation process we use techniques which aim to preserve and enhance the special qualities of this milk.


From cow's milk We produce a large variety of fresh cheeses, including creamy spreadables with added herbs and spices. Of special note is "Il Serpollo", a fresh cheese to which is added a locally grown aromatic herb from the nearby hills.
Mozzarella is forever popular, together with ricotta full of goodness and freshness.
Natural Yoghurt with probiotics for healthy eating.
Panna Cotta - plain, or with toppings of forest fruits, caramel or chocolate for a great dessert.

From sheep's milk Pecorino cheese either fresh or matured, delicate or strong. "Il Fossa" is an unmistakable cheese, which name derives from the time-old method of storage used in the area of Sogliano, "Plinius" is a strong flavoured blue veined cheese, "Il Montecristo Crudo" and "Magnus" - a real explosion of tastes produced from only unadulterated milk.

From goat's milk A range of small and subtle cheeses, naturally processed from moulds and enriched with herbs and spices. "Il Tronchetto d'Amore" white, tangy, soft, creamy and natural. Caprini sott'olio - a soft cheese preserved in oil to taste all year round.

From buffalo milk's Comes the unmistakable genuine mozzarella, ricotta, la treccia and caciotta.

Ricotta whether produced from cow's, sheep's , buffalo's or a mixture of milks - deserves a special mention owing to its natural goodness. It must be tried to appreciate its creamy and delicate taste and texture. Its uniqueness comes from the special care taken during production.

Also available are typical salame products from the renowned towns of Norcia and San Venanazo and many other typical delicacies to be tried with our cheeses for example the excellent Umbrian, torta di testo, torta di pasqua and various focaccia.

Moreover, at our sales outlet a variety of products are available to accompany our cheeses, such as mustards, pickles, preserves, jams etc., including onions, green tomatoes, bitter orange, sambuco, grapes, honey delicacies biologically produced, balsamic vinegars, a selection of excellent wines, and many other products such as toasted garlic in oil, asparagus in oil, etc.
